Green Goddess Mediterranean 
Baked Tilapia

Ingredients

  1. 1 whole fish (tilapia, hake, or your favourite white fish)
    Fillets work too — just create foil parcels for each one.
  2. ⅓ – ½ cup olive oil (adjust to the size of your fish)
  3. 1 lemon, sliced into 3–4 rounds
  4. 2 garlic cloves, crushed
  5. A handful of curly leaf parsley (it adds a deeper, punchier herb note than flat-leaf)
  6. 1 teaspoon Moxie Green Goddess Seasoning
  7. 1 extra lemon, for finishing
  8. A handful of chopped parsley, for garnish
  9. Coarse sea salt, for the roasting base

Instructions

  1. Prep the fish. Rinse lightly and pat dry with paper towel.
     
  2. Make the herb oil. Combine olive oil, crushed garlic, chopped parsley, and Moxie Green Goddess Seasoning.
     
  3. Create your base. Spread a generous layer of coarse sea salt on a shallow roasting pan — this seasons the fish and helps it bake evenly.
     
  4. Brush and fill. Place the fish on top of the salt and brush it generously with your Green Goddess oil. Add lemon slices inside the cavity (or on top if using fillets).
     
  5. Bake. Pop into a preheated oven at 180°C for 25–30 minutes, until the fish is opaque and flakes easily.
     
  6. Finish. Sprinkle with chopped parsley and squeeze over fresh lemon juice for a bright, glossy finish.
