Here’s the recipe: Braai Chicken Thighs with Chakalaka & Roosterkoek Ingredients – Chicken Marinade: • 8 chicken thighs • ½ cup olive oil • 1 clove garlic, minced • 2 tbsp oregano • 2 tbsp lemon juice • Salt & pepper • 2 tbsp garlic powder • 1 tbsp sugar • Rizzi Roast Moxie Spice Method: 1. In a bowl, combine olive oil, garlic, oregano, lemon juice, salt, pepper, garlic powder, sugar, and Moxie spice. 2. Coat the chicken thighs in the marinade. Cover and refrigerate for a few hours (or overnight for extra flavor). 3. Cook the marinated chicken thighs on the braai. 4. Serve hot alongside your Chakalaka and RoosterCrook bread. Roosterkoek Ingredients: (from Cooksister) • 2 ½ cups flour • 10g yeast • 1 tsp salt • 1 tbsp sugar • 1 tbsp oil • 180-200ml warm water • Moxie Zesty Za’taar Spice Method: 1. Mix the flour and salt in a bowl. 2. Add the oil and water, then mix until combined. 3. In a small bowl, mix the yeast, sugar, and a little warm water; let it bubble for about 5 minutes, then add it to the dough. 4. Knead the dough until smooth and elastic. 5. Fold in your Moxie zest za’atar and cover to let it rise until doubled in size. 6. Roll the dough into rectangles. 7. Place on the braai grid over medium coals and cook until golden and cooked through. Chakalaka (recipe adapted from African Bites) Ingredients: • 2 tbsp oil • 1 onion, chopped • 1 green pepper, chopped • 1 large carrot, peeled into ribbons • 2 cloves garlic, minced • 1 can baked beans • 2 whole tomatoes, chopped • 3 tbsp curry powder • 1 tsp paprika • Salt & pepper Method: 1. Heat oil and add onion and spices. 2. Add the veg and sauté until soft 3.
